Café Bombom


A Café Bombom (or Café Bombón, in Spanish), is a popular Spanish drink of half condensed milk, half coffee with hopefully beautiful foam on top.


That's where I drew my inspiration to make this dessert: a white layer made with a condensed milk based mousse (to which I think I've managed to add a bit of freshness with the lemon juice), a dark chocolate layer, a yummy foam layer (isn't whipped cream the equivalent in desserts to a good coffee's tasty foam?) and a coffee surprise on top. 


Here's the really simple - and fun - recipe:



INGREDIENTS

- For the lemon mousse:
1 can of condensed milk
200ml of cream
Juice of 1 and a half lemons
Extra: dark chocolate chips to top it

- For the chocolate mousse:
4 eggs
100g of butter
100g of sugar

- For the whipped cream:
200ml of cream
4 tablespoons of sugar


PREPARATION

First, prepare the refreshing lemon mousse. Whisk 1 can of condensed milk, 200ml of cream and the juice of 1 and a half lemons. Use the mousse to fill the bottom of glasses or individual transparent bowls. Let it set in the fridge for at least half an hour.


Carefully cover the lemon mousse with dark chocolate chips. Take it back to the fridge.
Um Café Bombom (ou Café Bombón, em espanhol), é uma bebida espanhola popular de meia dose de leite condensado e meia dose de café, com sorte com uma bela espuma por cima.

Foi daí que retirei a minha inspiração para fazer esta sobremesa: uma camada branca feita com uma mousse à base de leite condensado (à qual julgo que consegui acrescentar alguma frescura com o sumo de limão), uma camada escura de chocolate, uma deliciosa camada de espuma (o chantilly não é o equivalente nas sobremesas à saborosa espuma de um bom café?) e uma surpresa de café por cima.

Aqui está a receita muito simples - e divertida:


INGREDIENTES

- Para a mousse de limão:
1 lata de leite condensado
200ml de natas
Sumo de 1 limão e meio
Extra: pepitas de chocolate negro para a cobertura

- Para a mousse de chocolate:
4 ovos
100g de manteiga
100g de açúcar

- Para o chantilly:
200ml de natas
4 colheres de sopa de açúcar

PREPARAÇÃO

Primeiro, preparem a mousse de limão refrescante. Batam 1 lata de leite condensado, 200ml de natas e sumo de limão e meio. Usem a mousse para preencher o fundo de copos ou taças individuais transparentes. Levem ao frigorífico para que fique firme durante pelo menos meia hora.

Cuidadosamente cubram a mousse de limão com pepitas de chocolate negro. Voltem a colocar no frigorífico.
The next step is to prepare your chocolate mousse. Melt 200g of dark chocolate and 100g of butter in a bain-marie. 

Beat 4 egg yolks with 100g of sugar. Whisk the 4 egg whites. Pour the chocolate and butter mixture into the egg yolks and incorporate the egg whites.

With the help of a spoon, add a layer of chocolate mousse to every glass / bowl. Refrigerate.

O próximo passo é prepararem a vossa mousse de chocolate. Derretam 200g de chocolate negro e 100g de manteiga em banho maria. 

Batam 4 gemas com 100g de açúcar. Batam as 4 claras. Deitem a mistura de chocolate e manteiga nas gemas e incorporem as claras.


Com a ajuda de uma colher, adicionem uma camada de mousse de chocolate a cada copo / taça. Refrigerem.
You can't have a Café Bombom without coffee, can you? In this dessert, you are adding it in the form of coffee caviar. It's really simple to make. 

Fill a glass with vegetable oil, and let it cool in the fridge. Melt 2g of agar agar in 2 tablespoons of cold water. Make a cup of strong coffee, add the agar agar and mix. Let the mixture cool to room temperature. With the help of a spoon, let drops of coffee fall in the cold vegetable oil. As they set, reserve them in a plate in the fridge. 
Não podem tomar um Café Bombom sem café, certo? Nesta sobremesa, vão adicioná-lo sob a forma de caviar de café. É muito simples de fazer. 

Encham um copo com óleo vegetal, e deixem arrefecer no frigorífico. Derretam 2g de agar agar em 2 colheres de sopa de água fria. Façam uma chávena de café forte, adicionem o agar agar e misturem. Deixem a mistura arrefecer à temperatura ambiente. Com a ajuda de uma colher, deixem que caiam gotas de café no óleo frio. À medida que ficam firmes, reservem-nas num prato no frigorífico.
Finally, whisk 200ml of cream with 4 tablespoons of sugar. That will be the final layer of the dessert. 

Top it with the coffee caviar.

Finalmente, batam 200ml de natas com 4 colheres de sopa de açúcar. Essa vai ser a última camada da sobremesa.

Coloquem o caviar de café por cima.

    1. Thank you! The first time I tried this I was afraid the lemon flavour would contrast too much with the chocolate, but in the end I think it makes a nice balance with all the extra sweetness.

  21. Wow! What a great beverage you have here. I admit I am not a fun of drinking coffee, but with a coffee variant that looks very delicious like this one I will probably consume the whole glass. It would also be a great achievement for me if given a chance to taste this in reality.
