Last weekend was so great (as those of you who follow me on Instagram may have noticed). We went to Bairro Alto, listened to fado in Alfama, saw the sights in Sintra and Cascais... In fact, the weekend was so great, I needed this weekend to get a rest (does that only happen to me: needing a break after the break?). But it's also 6 months since we moved here, so yesterday I slowly started to take out of the boxes a few things we should have organized months ago. And of course I needed fuel, so I baked a cake first: an apricot pecan cake. Here's the recipe, which I found here, and adapted. Ingredients: 200g dried apricots water 250g pecan halves 200g butter, softened 200g Sores muscovado sugar 4 eggs, beaten a pinch of salt 140g flour Put the dried apricots in a saucepan and fill it with water so it just covers the apricots. Let it boil for about 5 minutes. Drain and blend them in a food processor until it becomes a paste. Chop 100g of pecan halves. Beat the butter and sugar until it is creamy. Add the apricot paste, chopped pecans, beaten eggs and a pinch of salt, and beat. Finally, fold in the flour with a spoon. Butter the cake tin and spoon in the cake mixture. Align the remaining pecan halves around the top of the cake. Bake it to 180ºC for about 40 minutes. Enjoy!

Digo eu. ;) Beijinhos e boa semana!
