The Portuguese "Bola de Berlim" is similar to the German "Berliner", but ours is filled with pastry cream (or not filled at all). You can find it in almost all Portuguese places which sell all kinds of cakes and pastries, but what I love the most is listening to people selling them at the beach - the typical cry "Bolinhas!.... " just takes me to that special place in my childhood... and to warm and sunny days.
Here is my non-fried easy-to-bake version of the well-loved "Bola de Berlim"... in a cupcake.
First, prepare the cupcakes. Whisk 2 eggs and 125g of caster sugar. Slowly add 125g of butter, 125g of flour and the zest of 1 lemon and whisk.
Pour the mixture into the cupcake moulds and let it cook in the oven to 180ºC for 15 minutes.
Then, prepare the confectioner's cream. Boil 100ml of milk. Meanwhile, in a bowl, mix 40g of sugar, 20g of flour, 50ml of milk, 1 egg yolk and 1 egg. Add the mixture to the boiling milk. Don't stop stirring until you get a thick cream. Take it out of the heat and let it cool.
Finally, take the cupcakes out of the moulds. Open each cupcake with a sharp knife, and use a spoon to add the confectioner's cream. Close the cupcake and sprinkle some caster or icing sugar on top.
Aren't these Berliner Cupcakes the cutest?

Tirem-no do calor e deixem-no arrefecer.
