Schwein Wienerschnitzel mit Kartoffel Salat / Wienerschnitzel de porco com salada de batata

Time for some memories.

I spent a week in Vienna almost 5 years ago and it was one of the most beautiful holidays I've ever had. 

Besides the sightseeing, the whole week was a feast for the palate: Käse Kreiner, Wienerschnitzel, Apfelstrudel, Sachertorte... Shall I continue? Better not.

As I've said before, one of my motivations for cooking also comes from my travels [done or to come]. So this week I decided to make my own version of potato salad with pork Wienerschnitzel [the real deal should be made of veal, but that's all I had]. So here's how I did my Kartoffelsalat:

First, I started boiling some potatoes cut in halves.

While they were boiling, I prepared the sauce, blending 4 tablespoons of olive oil, 1 table spoon of vinegar [I used cider vinegar], 1 tablespoon of mustard, a pinch of salt and some oreganos. I saved it in the fridge to cool down a bit.

Then I fried some bacon, and set it aside, along with some shredded beetroot.

Surprise your guests, adding some colour as well as some flavour.

While the potatoes were cooling, I fried the Wienerschnitzel [I bought these ready-to-cook, but they're super easy to make: pound the veal cutlet so it gets super thin, coat them in a mixture of flour and salt, dip them in a dish with 2 beaten eggs, roll them in a dish with breadcrumbs until they're coated and fry them in oil]. 

In the meantime, I put the potatoes in a serving dish and added the bacon and the beetroot. Finally, I drizzled the sauce on top of it and served it, along with the Wienerschnitzel and THE BEST Portuguese beer of all times: Super Bock.

These potatoes were made for dreaming.
There wasn't a single crumble left at the end.

Altura para algumas memórias.

Passei uma semana em Viena há quase 5 anos e foi uma das férias mais bonitas que já tive. 

Para além dos passeios, toda a semana foi um banquete para o palato: Käse Kreiner, Wienerschnitzel, Apfelstrudel, Sachertorte... Devo continuar? É melhor não.

Como disse antes, uma das minhas motivações para cozinha também vem das minhas viagens [feitas e a fazer]. Por isto esta semana decidi fazer a minha versão de salada de batata com Wienerschnitzel de porco [o verdadeiro deve ser feito de carne de vaca, mas era o que tinha]. Por isso aqui fica como fiz a minha Kartoffelsalat:

Primeiro, comecei por cozer algumas batatas cortadas a meio.

Enquanto estavam a cozer, preparei o molho, misturando 4 colheres de sopa de azeite, 1 colher de sopa de vinagre [usei vinagre de cidra], 1 colher de sopa de mostarda, uma pitada de sal e oregãos. Guardei no frigorífico para arrefecer um pouco.

Depois fritei o bacon, e reservei, juntamente com a beterraba desfiada.

Enquanto as batatas já estavam a arrefecer, fritei as Wienerschnitzel [comprei já prontas-a-cozinhar, mas é super fácil de fazer: martela a carne de vaca até ficar super fina, passa por uma mistura de farinha e sal, mergulha num prato com 2 ovos batidos, passa por pão ralado, e frita em óleo]. 

Entretanto, coloquei as batatas num prato de servir e adicionei o bacon e a beterraba. Finalmente, salpiquei o molho por cima, e servi, juntamente com a Wienerschnitzel e A MELHOR cerveja portuguesa de todos os tempos: Super Bock.

    1. Thank you! One of the fondest memories I keep is the way I notice people talk with each other. So quietly. So gently. So politely. We Portuguese are much more nervous. :P Friendly but nervous.
