Heather honey mustard chicken breast with couscous // Peito de frango com mel de urze e mostarda com couscous

Why, oh why did I have the morning all to myself? Now I've fallen in love with the Tea With Alice set, by the Portuguese Vista Alegre. I'm not that into tea sets - plain ones will work fine by me. In fact, as I was walking past the store, I was wondering how they are able to survive during this crisis. "It must be the tourists," I remember thinking. "Who else will spend their money on decorative cups and saucers, no matter how good and pretty they are?" As soon as I set my eyes on one of the pieces, I freezed. "How cute!, it reminds me of Alice in Wonderland". Then I looked at the next piece, and the next, and the next. Ok, it was no coincidence. And for the first time in my life, I fell in love with porcelain.

Today I'm posting a suggestion for dinner (which in fact was my dinner tonight): Heather honey mustard chicken breast with couscous. It's tasty and dead easy to make.

First, prepare the couscous. Put some couscous in a bowl. Heat water and as soon as it boils cover the couscous - the water should be about 1cm above the couscous, as in the pictures.

Cover the bowl with a plate and move on to the rest of the meal.

Cut the chicken breasts in small pieces and season them with sea salt, pepper and thyme. Fry them in a tablespoon of oil in the Actifry for 10 minutes. Add slices of 1 peeled apple (for every 2 people), 2 tablespoons of mustard and 2/3 of a spoon of heather honey and fry the chicken for 15 minutes.

Porquê, ó por que é que tive a manhã toda para mim? Agora apaixonei-me pelo conjunto Tea With Alice da portuguesa Vista Alegre. Não ligo muito a conjuntos de chá - simples servem. Na verdade, quando passava pela loja, ia a pensar como é que são capazes de sobreviver durante esta crise. "Devem ser os turistas," lembro-me de pensar. "Quem mais vai gastar dinheiro em chávenas e pires decorativos, por melhores e mais bonitos que sejam?" Assim que pus a vista numa das peças, congelei. "Que gira!, faz-me lembrar a Alice no País das Maravilhas". Depois olhei para a peça seguinte, e para a próxima, e para a próxima. Ok, não era coincidência. E pela primeira vez na minha vida, apaixonei-me por porcelana.

Hoje publico uma sugestão para o jantar (que foi o meu jantar hoje): Peito de frango com mel de urze e mostarda com couscous. É saboroso e tremendamente fácil de fazer.

Primeiro, prepara o couscous. Põe o couscous numa taça. Aquece água e assim que ferver cobre o couscous - a água deve estar cerca de 1cm acima do couscous, como nas fotografias.
 
Cobre a taça com um prato e segue para o resto da refeição.

Corta os peitos de frango em pedaços pequenos e tempera-os com sal, pimenta e tomilho. Frita-os numa colher de óleo na Actifry durante 10 minutos. Adiciona fatias de uma maçã descascada (por cada 2 pessoas), 2 colheres de sopa de mostarda e 2/3 de colher de mel de urze e frita o frango durante 15 minutes.

No fim adicionei passa de uva ao couscous.

    1. Thank you! I liked the result: chicken breasts tend to be quite dry, but this way they were both tender and juicy.
