A Sunday Odyssey: Hazelnut Cupcakes with Nutella Frosting

U-ho!, I thought as the electric blinds let the grey light fill the living room this morning. This was actually the first time I thought about the weather, rather than the beautiful view I have now.

Besides work, packing, moving to my new home and then unpacking has taken a lot of my usually free time, and that's why I haven't been able to post anything lately, but if there's something that can help you get an idea of what has moved me for the past few weeks is the view I now have after those few seconds it takes the electric shutters to open. Wide. Green. Peaceful. And a home of our own. Finally.



Half an hour later I was outside with the dog. Despite the menacing clouds, we managed to go for a long stroll without a single drop of rain - I think it may have been the first time this week though. 

I didn't have the opportunity to get too tired today. Cooper still prefers to explore, rather than run. Still, I needed something extra-sweet to raise my energy levels for the TONS of ironing I had to do this afternoon. This was THE answer:


Hazelnut cupcakes with nutella frosting. Here's the recipe.


Ingredients:

For the Cupcakes:
125g caster sugar
125g flour
125g butter
2 eggs
1 dessert spoon Monin's hazelnut syrup
40g roughly chopped hazelnuts

For the frosting:
200g cream cheese
80g nutella
350g icing sugar


THE CUPCAKES

Whisk the eggs and the sugar. Slowly add the butter, the flour, the chopped hazelnuts and the hazelnut syrup, while whisking.  

Pour the mixture into the cupcake molds and let the cupcakes cook in the oven to 180ºC for 16 minutes.

THE FROSTING

Whisk the cream cheese and the nutella. Add the icing sugar. Once the cupcakes have cooled, you can cover them with the frosting.  
U-ho!, pensei, à medida que os estores elétricos deixavam a luz cinzenta entrar na sala de estar esta manhã. Esta foi a primeira vez em que pensei no tempo, em vez de na vista bonita que tenho agora.

Para além do trabalho, fazer malas, mudar-me para a minha casa nova, e depois desfazer as malas tomou muito do meu tempo normalmente livre, e é por isso que não tenho conseguido postar nada ultimamente, mas se há algo que pode ajudar-vos a ter uma ideia do que me tem movido nas últimas semanas é a vista que agora tenho depois daqueles segundos que demora para os estores elétricos abrirem. Aberta. Verde. Pacífica. E uma casa nossa. Finalmente.

Meia hora mais tarde estava na rua com o cão. Apesar das nuvens ameaçadoras, conseguimos ir dar uma volta grande sem uma única gota de chuva - acho que deve ter sido a primeira vez nesta semana.

Hoje não tive a oportunidade de me cansar muito. O Cooper ainda prefere explorar a correr. Ainda assim, precisava de qualquer coisa extra-doce para aumentar os meus níveis de energia para as TONELADAS de roupa para passar que tinha esta tarde. Esta foi A resposta:

Cupcakes de avelã com cobertura de nutella. Aqui fica a receita.


Ingredientes:

Para os Cupcakes:

125g açúcar
125g farinha
125g manteiga
2 ovos
1 colher de sobremesa de xarope de avelã da Monin
40g avelãs picadas grosseiramente

Para a cobertura:
200g creme de queijo
80g nutella
350g açúcar de confeiteiro

OS CUPCAKES

Batam os ovos e o açúcar. Lentamente juntem a manteiga, a farinha, as avelãs picadas e o xarope de avelã, enquanto continuam a bater.  

Deitem a mistura nas formas de cupcake e deixem os cupcakes cozinharem no forno a 180ºC durante 16 minutos.

A COBERTURA


Batam o creme de queijo e a nutella. Adicionem o açúcar de confeiteiro. Assim que os cupcakes tiverem arrefecido, podem decorá-los com a cobertura.

    1. Angie: the first time I read about it I thought "erm.. nutella in frosting... sweetness overload... maybe next time". Then I tried it. Wow! Can't have enough now. :P Balanced with nuts (hazelnuts are great, but walnuts or almond will be fine, too) is amazing.
