Pepper and Pineapple Salad with Passion fruit Vinaigrette // Salada de Pimentos e Ananás com Vinagrete de Maracujá



This salad goes really well with pork ribs or with any meat in a tomato-based sauce (meatballs, for instance).


Ingredients:

1 red bell pepper
1 green bell pepper
4 canned pineapple slices

For the vinaigrette:
4 tablespoons olive oil
1 tablespoon PALADIN's fruit vinegar with passion fruit
1 tablespoon PALADIN's mustard with honey
salt

Grill the peppers over the stove for 15 to 20 minutes. Peel them, open them and take their seeds out. Cut them into strips. Reserve.

Cut the pineapple slices into squares. Reserve.

The vinaigrette is really simple to prepare: in a blender mix the olive oil, the vinegar, the mustard and the salt. The saucy blend of sweetness and acidity of the mustard with honey really compliments the surprising flavour of PALADIN'S fruit vinegar with passion fruit and the smoky flavour of the peppers over which you'll be pouring this vinaigrette. If you can't find mustard with honey near you, add just a slight portion of honey (I'd say about a coffee spoon) to your regular mustard.

Place the pineapple squares and the peppers in a serving dish. Pour some of the vinaigrete over them. Serve the salad with the rest of the vinaigrette on the side. Don't be surprised if it doesn't take long to disappear.



Esta salada combina mesmo bem com entrecosto ou qualquer carne num molho à base de tomate (almôndegas, por exemplo).

Ingredientes:

1 pimento vermelho
1 pimento verde
4 rodelas de ananás em lata

Para o vinagrete:
4 colheres de sopa de azeite
1 colher de sopa de vinagre de fruta com polpa de maracujá PALADIN
1 colher de sopa de mostarda com mel PALADIN
sal

Grelhem os pimentos no fogão durante 15 a 20 minutos. Tirem-lhes a pele, abram-nos e tirem-lhes as sementes. Cortem-nos em tiras. Reservem-nos.

Cortem as rodelas de ananás em quadrados. Reservem-nos.

O vinagrete é muito simples de preparar: misturem o azeite, o vinagre, a mostarda e o sal. A mistura atrevida de doçura e acidez da mostarda com mel complementa mesmo bem o sabor surpreendente do vinagre de fruta com maracujá da PALADIN e o sabor fumado dos pimentos sobre os quais irão colocar este vinagrete. Se não conseguirem encontrar mostarda com mel perto de vocês, adicionem uma pequena porção de mel (diria cerca de uma colher de café) à vossa mostarda habitual.

Coloquem os quadrados de ananás e os pimentos num prato de servir. Deitem um pouco do vinagrete por cima. Sirvam a salada com o resto do vinagrete ao lado. Não se admirem se não demorar muito a desaparecer.

    1. I know! I first tried the apple flavoured one and thought "WOW!" - great with summer salads, fresh and juicy. This passionfruit one just blew my mind. Combined with balsamic vinegar in a dish, for instance: perfection.

      You can probably order it online, though. (not too sure about that, but since they have a website in English, it sounds reasonable)

    1. Hi, Zoe. I was just having a conversation about this with a friend this afternoon: there's something about seasonings that really attracts me. The way the whole picture of a dish completely changes with something as "trivial" as the flavour of a vinegar is just so appealing to me.
