Farófias in a Sugar Trio // Farófias em Trio de Açúcar


Sometimes a special occasion calls for something sweet.

Why don't you try this version of "farófias" (a dessert with whisked egg whites and sugar boiled in milk) for Christmas?

Ingredients:

For the syrup:
50g Sores soft brown sugar
water
1 tablespoon cream

For the farófias:
3 egg whites
milk
30g Sidul fructose

For the decoration:
1 pear 
1 teaspoon Sores muscovado sugar

To prepare the syrup, simply heat the soft brown sugar in a pot with a tablespoon and a half of water. Let it boil for three minutes. Reserve.

Then, while beating the egg whites, slowly incorporate the frutose. Take a spoon of the mixture, tranfer it into a pan with milk and let it boil for 30 seconds. Turn the egg whites mixture, so it will boil on the other side, and wait another 30 seconds. Don't boil more than 4 at the same time, as they will grow in size and so they won't have enough space. Take them from the heat onto a serving dish.

Place a dessert spoon of the sugar syrup in each bowl or glass you're serving it in. Reserve 1 tablespoon of syrup per person. Then add a tablespoon of cream to the rest of the syrup and mix well. Add 2 tablespoons of that mixture to each bowl or glass. Then place a farófia (the egg white mixture) in each bowl or glass. Let a few drops of syrup (without cream) fall over the farófias and finally sprinkle them with muscovado sugar.


Place the serving bowl or glass on a dish. Decorate the dish with slices of pear and sugar syrup drops (without cream).

Por que não experimentam esta versão de farófias (uma sobremesa com claras em castelo e açúcar cozidas em leite) para o Natal?

Ingredientes:

Para a calda:
50g açúcar moreno macio Sores
água
1 colher de sopa de natas

Para as farófias:
3 claras
leite
30g frutose Sidul

Para a decoração:
1 pear
1 colher de chá açúcar mascavado Sores

Para preparar a calda, aqueçam o açúcar moreno macio numa caçarola com uma colher de sopa e meia de água. Deixem ferver durante três minutos. Reservem.

Seguidamente, enquanto batem as claras em castelo, incorporem lentamente a frutose. Tirem uma colher da mistura, transfiram-na para uma caçarola com leite e deixem ferver durante 30 segundos. Virem a mistura, para que coza do outro lado, e aguardem outros 30 segundos. Não cozinhem mais de 4 ao mesmo tempo, uma vez que crescem e portanto não terão espaço suficiente. Retirem-nas do calor para uma travessa.

Coloquem uma colher de sobremesa da calda de açúcar em cada taça ou copo onde a vão servir. Guardem uma colher de sobremesa de calda por pessoa. Acrescentem então uma colher de sopa de natas ao resto do xarope e mexam bem. Juntem 2 colheres de sopa dessa mistura a cada taça ou copo. Coloquem então a farófia (a mistura de claras) em cada taça ou copo. Deitem algumas gotas de calda (sem natas) por cima das farófias e finalmente polvilhem-nas com açúcar mascavado.

Coloquem a taça ou copo em cima de um prato. Decorem-no com fatias de pera e gotas de calda (sem natas).
