Lemon and Passion fruit Mousse with Chocolate and a Peanut Butter Base // Mousse de Maracujá e Limão com Chocolate e uma Base de Manteiga de Amendoim

Something sweet for my sweet readers.

Ingredients:

BASE:
4 tablespoons flour
3 tablespoons peanut butter
half a teaspoon baking powder
4 tablespoons milk

CHOCOLATE LAYER:
200g chocolate
200ml cream

MOUSSE:
1 can condensed milk
400ml cream
4 gelatin leaves
1 can passion fruit pulp
4 tablespoons milk
2 tablespoons lemon juice

First, prepare the base. In a mug mix all the ingredients - flour, peanut butter, baking powder and milk. Heat in the microwave for about a minute. Spread the mixture in the bottom of a serving dish. Reserve in the refrigerator.

Then, prepare the chocolate layer. Simply heat the cream and then add the chopped chocolate, stirring until it melts completely. Cover the peanut butter base with the chocolate layer and reserve in the refrigerator again.

Finally, prepare the lemon and passion fruit mousse. Pour the condensed milk into a bowl, and mix. Add the cream and mix until it's combined. Soak the gelatin leaves in water for five minutes, add them to the warm milk (about 40 seconds in the microwave) and stir until they are dissolved. Add the mixture to the cream and condensed milk one. Mix. Finally, add the passion fruit pulp and the lemon juice. Pour over the chocolate layer and refrigerate again.

It's ready to serve in about 3 hours.

    1. It's funny how I used to frown whenever my parents ate passion fruit when I was a kid - "ewwww that looks ewwwwww" I'd say. How I've changed... Personal secret: love to bite the tiny passion fruit seeds. Have a great week!
