Beef stew / Guisado de carne de vaca

Let me start by wishing you all a wonderful 2013.

By the way it began, it sounds like it's going to be a great year for me. I spent the New Year at a party at some friends' house chatting, drinking and dancing and one day later I got a text message from my friend Miguel saying he was the proud dad of a baby girl. 

So I had an extra motivation in the kitchen today: make something that would be as warm and comforting as my first 2 days of 2013. Not an easy challenge, I must add! 

I decided for a beef stew - and I was quite pleased with the result. If you're like me, and cook pasta 95% of the time, this is a nice and healthy alternative.

Pour some olive oil and a knob of butter in a cooking pan and let it cook in medium heat. As the butter melts, add 1 onion, sliced. About 3 minutes later, turn the heat up and add the beef cut in small cubes and coated with flour. Let the meat get that lovely golden colour, and turn the heat back down again. Add salt, black pepper and cayenne pepper to taste. Add 3 cloves of garlic, sliced, and a bay leaf.
Then add about 100g of tomato paste and some piri-piri [hot sauce] and stir.
Add 3 potatoes and 2 carrots, cut in cubes, and a bottle of beer. The flour will help the sauce thicken.
Let it cook for about 30 minutes and finally add peas and let it cook for about 10 to 15 minutes.

Decorate with chopped parsley. Serve with white rice and enjoy the meal!

Deixem-me começar por vos desejar a todos um maravilhoso 2013.

Pela forma como começou, parece que vai ser um grande ano para mim. Passei o ano novo na casa de uns amigos, a conversar, a beber e a dançar e um dia depois recebi uma sms do meu amigo Miguel a dizer que era o pai orgulhoso de uma menina. 

Por isso tinha uma motivação extra na cozinha hoje: fazer qualquer coisa que fosse tão calorosa e reconfortante quanto os meus primeiros 2 dias de 2013. Não foi um desafio fácil, devo acrescentar! 

Decidi-me por um guisado de carne de vaca - e fiquei bastante satisfeita com o resultado. Se forem como eu, e cozinharem massa 95% do tempo, esta é uma alternativa simpática e saudável.

Coloca algum azeite e manteiga num tacho e deixa cozinhar em lume médio. À medida que a manteiga derrete, junta 1 cebola, fatiada. Cerca de 3 minutos depois, aumenta o lume e junta a carne de vaca cortada em cubos pequenos e coberta com farinha. Deixa a carne ficar com aquele maravilhoso tom dourado, e volta a baixar o lume. Acrescenta sal, pimenta preta e pimenta de caiena a gosto. Adiciona 3 dentes de alho, fatiados, e uma folha de louro.
Depois adiciona cerca de 100g de pasta de tomate e piri-piri e mexe.
Junta 3 batatas e 2 cenouras, cortadas em cubos, e uma garrafa de cerveja. A farinha vai ajudar a que o molho engrosse.
Deixa cozinhar durante cerca de 30 minutos e finalmente junta ervihas e deixa cozinhar durante cerca de 10 a 15 minutos.

Decora com salsa picada. Serve com arroz branco e aprecia a refeição!

    1. Thank you! Some people add wine to their stews. I often find that beer is less acidic than wine, so I prefer to use it in certain dishes.
