Chicken with yogurt sauce / Frango com molho de iogurte

Despite the nice, sunny weather, this afternoon was not that warm for me. Mostly because I saw about 90 euros fly out of my wallet. No, there was no thief involved. Although I had been postponing it for quite a while [to dangerous levels, I must add], I finally had the oil in my car changed. I know, I know... I'm awful when it comes to taking care of my car.

So that occupied my mind the whole afternoon, and I forgot to think about dinner. So my motivation for tonight's dinner - please don't laugh - ended up being a greek yogurt (lemon flavour) I had in my fridge and which was almost past its expiration date. So I had this one ingredient I wanted to use, and started taking things out of the freezer and cabinets almost randomly, until I saw a bag of chicken breasts and yup, yup, I knew what I wanted to make: chicken breasts with a yogurt sauce. Here's how you can do it, too.

First, season the chicken breasts with 3 chopped garlic cloves, a pinch of salt, olive oil and the juice of half a lemon and let it rest for at least half an hour.

In a bowl, add chopped thyme, chopped parsley and just a hint of dried oregano (in the end, the choice of herbs is yours, but I really recommend this combination) to breadcrumbs


Run the chicken breasts through the mixture and place them in an oven-proof dish with greaseproof paper, along with the olive oil that remained in the dish where you seasoned them.

Let it cook for about 30 minutes in the oven to 180ºC, turning it at least two times.

For the yogurt sauce: in a small bowl put chopped thyme, chopped parsley, a pinch of salt, a yogurt and the juice of the other half of the lemon. Since I used a lemon Greek yogurt, I didn't add any lemon juice. Mix and transfer it to a serving bowl.

I dare you to leave some of it to your guests.
I served the chicken with french fries and a lettuce and persimmon salad (I only used a pinch of sea salt to season it, since I expected the yogurt sauce to do all that hard work).

My wine choice was a Dikas red wine - an unexpected surprise, this Dão wine: it was the first time I had it and I was quite pleased with its fruitiness and the way it combined perfectly with the whole meal. 

At the end of the meal, I got a mellow "if you had any more chicken, I'd eat it all". Sounds like a love declaration to me.

Apesar do tempo simpático e solarengo, esta tarde não foi assim tão calorosa para mim. Principalmente porque vi cerca de 90 euros a voar da minha carteira. Não, não esteve nenhum ladrão envolvido. Embora estivesse a adiar há bastante tempo [a níveis perigosos, devo acrescentar], finalmente mudei o óleo do carro. Eu sei, eu sei... Sou horrível no que diz respeito a cuidar do meu carro.

Então isso ocupou-me a cabeça toda a tarde, e esqueci-me de pensar no jantar. Por isso a minha motivação para o jantar desta noite - por favor não se riam - acabou por ser um iogurte grego (sabor a limão) que tinha no meu frigorífico e que estava quase a passar do prazo de validade. Então eu tinha este ingrediente que queria usar, e comecei a tirar coisas do congelador e dos armários quase à sorte, até que vi um saco de peito de frango e pois, pois, soube o que queria fazer: peitos de frango com um molho de iogurte. Aqui vai como o podem fazer, também.

Primeiro, tempera os peitos de frango com 3 dentes de alho picados, uma pitada de sal, azeite e sumo de meio limão e deixa descansar por pelo menos meia hora.

Numa taça, junta tomilho e salsa picados e uma pitada de oregãos secos (eventualmente, a escolha quanto às ervas a usar é tua, mas recomendo mesmo esta combinação) a pão ralado

Passa os peitos de frango na mistura e coloca-os num tabuleiro de ir ao forno com papel vegetal, juntamente com o azeite que sobrou no prato onde os temperaste.

Deixa cozinhar durante cerca de 30 minutos no forno a 180ºC, virando-os pelo menos duas vezes.

Para o molho de iogurte: numa taça pequena coloca salsa e tomilho picados, uma pitada de sal, um iogurte e o sumo da outra metade do limão. Já que usei um iogurte grego de limão, não acrescentei sumo nenhum. Mistura tudo e transfere para a taça onde o vais servir.

Servi o frango com batatas fritas e uma salada de alface e dióspiro (apenas usei uma pitada de sal para a temperar, uma vez que esperava que o molho de iogurte fizesse todo esse trabalho árduo).
 
A minha escolha de vinho residiu num tinto Dikas - uma surpresa inesperada, este vinho do Dão: foi a primeira vez que o provei e fiquei bastante satisfeita com a sua nota frutada e a forma como combinou de forma perfeita com toda a refeição. 

No fim da refeição, recebi um adocicado "se tivesses mais frango, comia tudo". A mim soa-me a uma declaração de amor.
