Chicken in mushroom sauce with thyme rice // Frango com molho de cogumelos e arroz de tomilho

Happy! Happy! Happy! My parents came for a visit all the way from Ribatejo (in central Portugal) - and on a week day. We went out for lunch and spent the whole afternoon together, sharing news and making plans. It's a pity we live so far away (about 200km), but that's life and at least we make the most of it when we're together. They're already hooked on one of my favourite restaurants around here, so I guess I'm doing something right. 

Their visit naturally inspired today's dinner: chicken in mushroom sauce served with thyme rice, full of Ribatejo's flavours. 

Ingredients:
200g of chicken strips
100g of small-sized mushrooms
1 teaspoon of hot sauce - I used Paladin's Sacana hot sauce with lemon
olive oil
salt 

For the rice:
100g of rice - I used Orivárzea carolino rice (PGI)
water
salt
1 tablespoon of thyme
Feliz! Feliz! Feliz! Os meus pais vieram de visita do Ribatejo (no centro de Portugal) - e num dia de semana. Fomos jantar fora e passámos a tarde juntos, a partilhar notícias e a fazer planos. É uma pena vivermos tão longe uns dos outros (a cerca de 200km), mas é a vida e pelo menos aproveitamos quando estamos juntos. Já estão viciados num dos meus restaurantes preferidos aqui da zona, por isso acho que estamos a fazer alguma coisa bem.

A visita deles naturalmente inspirou o jantar de hoje: frango com molho de cogumelos servido com arroz de tomilho, cheio de sabores ribatejanos.

Ingredientes:

200g de tiras de frango
100g de cogumelos pequenos
1 colher de chá de piri-piri - usei piri-piri com limão Sacana da Paladin
azeite
sal

Para o arroz:

100g de arroz - usei arroz carolino (IGP) Orivárzea
água
sal
1 colher de sopa de tomilho

Heat some olive oil in a frying pan. Add the chicken strips and fry them until they start getting some colour. Pour 1 tea spoon of hot sauce with lemon. 

It was the first time I used it and boy, I must admit it lived up to my expectations. And I think it really blends in with the thyme rice so today was a Happy Alex Day indeed. Besides, I'm absolutely in love with the "Sacana" brand. "Sacana" is a Portuguese term often used in Ribatejo (up north I've never heard it) to refer to someone being tricky. It might be a derogative term, but it can also be a playful, "affectionate-ish" way to call someone. If there are any words that SOUND like home to me, this is one of them. What a perfect way to call a hot sauce from Ribatejo.


But let's go back to the recipe. Now add the mushrooms. Let them get a golden colour, add 150g of cream and let it cook for a couple of minutes.
Aqueçam azeite numa frigideira. Juntem as tiras de frango e fritem-nas até começarem a ganhar cor. Deitem uma colher de chá de piri-piri com limão. 

Foi a primeira vez que o usei e menino, tenho de admitir que correspondeu às minhas expectativas. E acho que combina mesmo bem com o arroz de tomilho por isso foi mesmo Dia de Alex Feliz. Para além disso, estou absolutamente apaixonada pela marca "Sacana". "Sacana" é um termo português usado frequentemente no Ribatejo (no norte nunca o ouvi) para nos referirmos a alguém que é malandro, enganador. Pode ser um termo depreciativo, mas também pode ser uma forma brincalhona, meio afectuosa de chamar alguém. Se há palavras que me SOAM a casa, esta é uma delas. Que maneira perfeita de chamar a um piri-piri do Ribatejo.

Mas voltemos à receita. Agora acrescentem os cogumelos. Deixem-nos dourar, acrescentem 150g de natas e deixem cozinhar durante alguns minutos.

For the rice, simply add 100g of rice to boiling salted water. Let it cook for about 8 minutes. Add a tablespoon of thyme. Stir and serve.

Para o arroz, simplesmente adicionem 100g de arroz a água salgada a ferver. Deixem cozinhar durante 8 minutos. Acrescentem uma colher de sopa de tomilho. Mexam e sirvam.

  5. I am so glad you had a chance to have a visit with your parents. I know it is difficult when you live so far away from each other. I live 15 hours flight away from home so trust me I know all about being homesick. Paladin's Sacana hot sauce with lemon sounds like something I could get a lot of use with my cooking. I love your chicken, mushroom with the creamy sauce. Very delicious!

    1. Wow: feeling homesick when I'm only 1h45m away seems a bit overrated now.

      Now imagine the hot sauce varieties with orange or pineapple. Sometimes the trick is in the accessories. ;)
