Potato entrée, Portuguese style // Entrada de Batatas à Portugalidade


With so many of my friends leaving my country for the hope of a brighter future, I had to make PORTUGAL the theme for this recipe. Because no matter how far away they are, I know Portugal is still in their hearts. The hint of a missed francesinha, a touch of previous family holidays with cod on the table, a taste of walnuts and how proud we were when we first cracked one without making it in pieces, is just a tiny trigger for memory.

Ingredients:

potatoes
shredded cod
2 bread slices
50g walnuts
1 egg per person
1 "linguiça" sausage
1 slice of cheese
olive oil
3 tablespoons margarine
salt
Paladin yogurt dressing
Paladin olives & oreganno dressing
Paladin sauce "à cervejaria"


Cut the potatoes in thick slices. Boil them in salted water for 12 minutes

Place them in an ovenproof dish with olive oil and margarine. Bake the potatoes for 25 minutes

At the same time, boil the shredded cod until the water starts boiling. Place it in an ovenproof dish with olive oil and reserve.

Put the bread slices and the walnuts in a blender. Mix and place the mixture in half of an ovenproof dish.

In the other half, place "linguiça" sausage slices on aluminum foil, so the grease won't go to the breadcrumbs.

Place both ovenproof dishes (the one with the cod and the one with the linguiça and the breadcrumbs mix) in the oven and turn only the top part on. When they are golden, turn off the oven and take the ovenproof dishes out.

Fry the egg(s).

Place three potatoes in a dish. Top one with shredded cod and olives & oreganno dressing. Cover the second in the walnuts and breadcrumbs mix and top it with yogurt dressing. Finally, top the third potato with a slice of cheese, the fried egg, slices of linguiça and sauce "à cervejaria".

Com tantos dos meus amigos a deixar o meu país na esperança de um futuro melhor, tinha de fazer de PORTUGAL o tema desta receita. Porque estejam eles onde estiverem, sei que Portugal está nos seus corações. A insinuação de uma saudosa francesinha, um toque de férias em família com bacalhau à mesa, um gosto de nozes e de como nos sentimos orgulhosos quando abrimos uma sem a partir em pedaços pela primeira vez, é apenas um pequeno gatilho para a memória.

Ingredientes:

batatas
bacalhau desfiado
2 fatias de pão
50g nozes
1 ovo por pessoa
1 linguiça
1 fatia de queijo
azeite
3 colheres de sopa de margarina
sal
molho de iogurte Paladin
molho de azeitonas e oregãos Paladin
molho à cervejaria Paladin


Cortem as batatas em fatias grossas. Cozam-nas durante 12 minutos

Coloquem-nas num tabuleiro com azeite e margarina. Assem as batatas durante 25 minutos.

Ao mesmo tempo, cozam o bacalhau desfiado até a água começar a ferver. Coloquem-no num tabuleiro com azeite e reservem.


Coloquem as fatias de pão e as nozes num copo misturador. Mexam e coloquem a mistura em metade de um tabuleiro.

Na outra metade, coloquem fatias de linguiça em papel de alumínio, para que a gordura não vá para o pão ralado.

Coloquem ambos os tabuleiros (aquele com o bacalhau e aquele com a linguiça e a mistura de pão ralado) no forno e liguem apenas a parte de cima. Quando estiverem dourados, desliguem o forno e retirem os tabuleiros.

Fritem o(s) ovo(s).

Coloquem três batatas num prato. Numa coloquem bacalhau desfiado e o molho de azeitonas e oregãos. Cubram a segunda com a mistura de pão ralado e nozes e finalizem com o molho de iogurte. Finalmente, cubram a terceira batata com uma fatia de queijo, o ovo estrelado, fatias de linguiça e molho à cervejaria.
