These Winter days are begging for sweet moments. That was my excuse for baking these yesterday (those who follow me on Instagram have probably seen them already). They are not as soft or sweet as the other cupcake recipes I've posted, so people who find cupcakes too sweet often prefer these. They are great with a warm cup of coffee or tea and by the third day a bit of butter on them is just per-fect. Ingredients: 1 egg 125g sugar 125g butter 1 dessert spoon cinnamon 200g flour 1/2 dessert spoon baking powder a pinch of salt zest of 1 lemon icing sugar (I used Sidul) Beat the egg and the sugar. Add the butter (softened). Slowly add the cinnamon, the flour, the baking powder and the salt. Finally, add the lemon zest. Place paper cups in a cupcake tray, and pour the cupcake mixture. Bake the cupcakes for about 4 minutes to 200ºC. Take them out and use a fork or any tool you prefer to either draw a few lines or any kind of shapes. If you look closely at the photos, you will notice some of the cupcakes are smooth, while others are more irregular. Put the cupcakes back in the oven and let them bake at 180ºC for 20 minutes. Take them out, let them rest for a couple of minutes before taking the paper cups out of the cupcake tray, place them on a serving plate or tray and powder them with icing sugar. Adicionem a manteiga (amolecida). Lentamente adicionem a canela, a farinha, o fermento e o sal. |
Fill the cups to 2/3. // Encham as formas até 2/3. |

This reminds me of the weather in Portugal these days a bit too much. // Isto faz-me lembrar do tempo em Portugal durante estes dias um pouco demais. |

DeleteI'm one who often finds cupcakes overly sweet, so these are just the thing for me. Really nice -- thanks.
ReplyDeleteThank you. I have an amazing sweet tooth and of course all things "sugar" are appealing, but I'd also say these are more likely to be eaten more quickly.
