If you saw last recipe's photos, you might have noticed something which wasn't really part of the recipe lurking in the background. That was in fact a portion of Stewed Pork Chops with Port wine that I served with the oyster mushrooms. I had served one as the side dish of the other. Not too sure which one was the side dish in this meal, though. Actually, the way I took the photo makes it pretty obvious, but I feel the Stewed Pork Chops deserve a post of their own. As much as you deserve to have the chance to find out how buttery and warm, slightly fruity and acidic they are. Oh, yeah - that's the way hm hm hm hm I like it! Great for dinners for two as well as family dinners. Ingredients: 4 pork chops 4 garlic cloves (sliced) 1 onion (sliced) 1 tablespoon margarine 250g tomato purée half a glass Port wine a cube of Knorr "Molho Cervejeira" (typical Portuguese sauce for steaks) a pinch of salt a pinch of black pepper olive oil 300ml water Fry the pork chops in olive oil in a tall wide pot. Reserve. Add the garlic and onion to the olive oil. When they are soft, add the margarine. As it melts, add the tomato purée. Let the flavours intensify for a couple of minutes. Finally, add the stock cube and the water. When the water is boiling, add the pork chops. Cover the pot, reduce to medium-low heat and let the pork chops cook for about 45 minutes. Serve them with some of the sauce on top and the rest on the side - and trust me, you don't want to place it too far from you on the table. Tratava-se de uma porção de Costeletas de Porco Estufadas com vinho do Porto que servi com os cogumelos ostra. Tinha servido um como acompanhamento do outro. Não tenho é a certeza qual deles é que era o acompanhamento nesta refeição. Bom, a forma como tirei a foto torna a resposta óbvia, mas sinto que as Costeletas de Porco estufadas merecem um post só delas. Tal como vocês merecem ter a oportunidade de descobrir como são amanteigadas e quentes, ligeiramente frutadas e acídicas. Ó sim - é assim que gosto delas! Fantásticas para jantares a dois, assim como para jantares de família. Ingredientes: 4 costeletas 4 dentes de alho (fatiados) 1 cebola (fatiada) 1 colher de sopa de margarina 250g puré de tomate meio copo de vinho do Porto um cubo de "Molho Cervejeira" Knorr (molho para bifes tipicamente português) uma pitada de sal uma pitada de pimenta preta azeite 300ml de água Fritem as costeletas de porco em azeite um tacho alto e largo. Reservem. Adicionem o alho e a cebola ao azeite. Quando estiverem amolecidos, juntem a margarina. À medida que derrete, juntem o puré de tomate. Deixem os sabores intensificarem por alguns minutos. Finalmente, deitem o cubo Knorr e a água. Quando a água estiver a ferver, adicionem as costeletas. Cubram o tacho, reduzam para lume médio-brando e deixem as costeletas cozinharem durante cerca de 45 minutos. Sirvam-nas com algum do molho por cima e o resto numa molheira a acompanhar - e confiem em mim, não querem que o molho esteja demasiado longe de vocês. Bom apetite! |
