Chorizo bites with mushroom sauce // Bites de chouriço com molho de cogumelos

In Portugal, schools typically celebrate Carnival on the Friday immediately before the holidays. Depending on the school and grade, the celebrations go from simple costume contests to big organized events with the intention of being caught on camera by proud parents (who will most likely not miss the chance of showing every photo/video to everyone they can). [What is pride for some, might be a great and cheap marketing tool for others.]

Anyway, today's streets were filled with more or less organized lines of colourful kids, lots of music and laughter. I just love a day like this one.

So, why not make a disguised dinner as well? This is how I came up with these chorizo bites.
 
A beautiful chorizo from Alentejo.








Cut a chorizo into dices, run them over a beaten egg, then over flour mixed with salt and pepper, then over the egg again and finally over bread crumbs. Fry in hot oil. This will only take a few moments. Quickly turn the chorizo dices over so they will get golden on both sides, and plate them.

The Mask.
For the mushroom sauce, simply melt a generous tablespoon of margarine in a frying pan and add mushrooms and chopped chive. Let it cook until the mushrooms start to become golden, and add 200g of cream. Let it cook for about 5 minutes.

Fizzzzzzzzzzzzzzzz.
I served it with a fried yolk [the egg whites were used in a meringue.]

Em Portugal, as escolas tipicamente celebram o Carnaval na sexta imediatamente antes das férias. Dependendo da escola e do ano escolar, as celebrações vão de simples concursos de máscaras a grandes eventos organizados com a intenção de serem apanhados pelas câmaras dos orgulhosos pais (que muito provavelmente não irão perder a oportunidade de mostrar cada foto/vídeo a todos quantos puderem). [O que é orgulho para uns, pode ser uma grande e barata ferramenta de marketing para outros.]

De qualquer modo, as ruas de hoje estiveram cheias de filas mais ou menos organizadas de miúdos coloridos, imensa música e risos. Adoro um dia como o de hoje.

Portanto, por que não fazer também um jantar disfarçado? Foi assim que tive a ideia destes bites de chouriço.
  
Corta um chouriço em rodelas, passa-as por ovo batido, depois por uma mistura de farinha com sal e pimenta, depois de novo pelo ovo e finalmente por pão ralado. Frita em óleo quente. Só vai demorar uns breves momentos. Vira as rodelas de chouriço para que dourem de ambos os lados, e emprata.
Para o molho de cogumelos, simplesmente derrete uma colher de sopa generosa de margarina numa frigideira e junta cogumelos e cebolinho picado. Deixa cozinhar até que os cogumelos comecem a dourar, e acrescenta 200g de natas. Deixa cozinhar durante cerca de 5 minutos.

Servi com uma gema frita [as claras foram usadas num suspiro.]

    1. Thanks! These chorizo bites taste incredibly, too. Of course it all depends on the chorizo, so we all should pick a chorizo we enjoy. Softer, tender ones are better, to contrast with the crunchiness of the bread crumb coat.

    1. Olâ, Vânia! Muito frio, por aqui... É verdade, cada vez que vejo alguma criança mascarada lembro-me do meu tempo e das birras que fazia porque queria esta ou aquela máscara. :P
