Chickpeas with pork steak and chorizo with Thousand Island dressing // Grão de bico com bifana e chouriço com molho Mil Ilhas

I love the combination of flavours here: the fleur de sel for grilling adds this amazing rustic tone to the meat and the Thousand Island dressing gives it a bitter-sweet aftertaste that will make you sigh for more at the end of the meal.

Ingredients:

3 thin pork steaks 
fleur de sel for grilling Casa do Sal
chickpeas
1/3 of a black pig chorizo
1 quail egg per person
chopped chives
a pinch of salt
vegetable oil
Paladin Thousand Island dressing

Boil the chickpeas. Season with salt.
Slice the steaks in small pieces and season them with the fleur de sel. 
Pour a tiny amount of vegetable oil in a frying pan. Fry the pieces of steak for a couple of minutes. 
Add the chopped chorizo. Stir and let it fry for another couple of minutes.
Fry the quail eggs in vegetable oil. Season with salt.

Place the chickpeas on a plate. Add the chopped chive. Then add the pork steak pieces and chorizo. Pour a little of that juice that is left in the frying pan over the chickpeas. Place the fried egg on top. 

Finish with a few dessert spoons of the beautiful Paladin Thousand Island dressing - the best store-bought thousand island dressing I've tasted in years - on the borders of the plate.
Adoro a combinação de sabores neste prato: a flor de sal para grelhados dá um fantástico tom rústico à carne e o molho Mil Ilhas dá-lhe um sabor agri-doce que vos vai fazer suspirar por mais no fim da refeição.

Ingredientes:

3 bifanas
flor de sal para grelhados Casa do Sal
grão de bico
1/3 de chouriço de porco preto
1 ovo de codorniz por pessoa
cebolinho picado
uma pitada de sal
óleo vegetal
Molho Mil Ilhas Paladin

Cozam o grão de bico. Temperem com sal.
Cortem as bifanas em pedaços pequenos e temperem-nos com a flor de sal. Deitem uma pequena quantidade de óleo vegetal numa frigideira. Fritem os pedaços de bifana durante alguns minutos. 
Adicionem o chouriço picado. Mexam e fritem mais alguns minutos.
Fritem os ovos de codorniz em óleo vegetal. Temperem com sal.

Coloquem o grão de bico num prato. Juntem o cebolinho. Depois adicionem os pedaços de bifana e chouriço. Deitem algum daquele sumo que ficou na frigideira por cima do grão de bico. Coloquem o ovo frito por cima.

Terminem com algumas colheres de sobremesa do maravilhoso molho Mil Ilhas da Paladin - o melhor molho mil ilhas de compra que já provei nos últimos anos - nas bordas do prato.

    1. Sim, grão só por si não é algo por que se morra de amores. Mas com certas combinações (cebola e polvo, chouriço e certos molhos como o Mil Ilhas... é qualquer coisa. Há quarta garfada torna-se viciante. :) Beijinhos e bom fim de semana!
