I love the combination of flavours here: the fleur de sel for grilling adds this amazing rustic tone to the meat and the Thousand Island dressing gives it a bitter-sweet aftertaste that will make you sigh for more at the end of the meal. Ingredients: 3 thin pork steaks fleur de sel for grilling Casa do Sal chickpeas 1/3 of a black pig chorizo 1 quail egg per person chopped chives a pinch of salt vegetable oil Paladin Thousand Island dressing Boil the chickpeas. Season with salt. Slice the steaks in small pieces and season them with the fleur de sel. Pour a tiny amount of vegetable oil in a frying pan. Fry the pieces of steak for a couple of minutes. Add the chopped chorizo. Stir and let it fry for another couple of minutes. Fry the quail eggs in vegetable oil. Season with salt. Place the chickpeas on a plate. Add the chopped chive. Then add the pork steak pieces and chorizo. Pour a little of that juice that is left in the frying pan over the chickpeas. Place the fried egg on top. Finish with a few dessert spoons of the beautiful Paladin Thousand Island dressing - the best store-bought thousand island dressing I've tasted in years - on the borders of the plate.
