Coffee Cheesecake // Cheesecake de Café

Is it a plane? Is it Superman? Is it a UFO? No!... It's Super Coffee Cheesecake! // É um avião? O Super-Homem? Um OVNI? Não!... É Super Cheesecake de Café!

Oh, well... the first week of work in 2014 was really calling for a dessert... (Nice excuse, hey?) Although I missed work and the gang, I wouldn't mind an extra week of holidays, so I really needed a treat.

And you? Do you give any excuses when you want to make and repeat and make again YOUR favourite dishes at home?

Ingredients:

200g ladyfingers
100g melted butter

2 packages of cream cheese
6 tablespoons sugar (I used Sidul)
1 tea spoon vanilla extract
6 tablespoons flour
3 eggs
about 1/3 of a cup of coffee

Prepare the coffee and reserve.

Crush the ladyfingers, add the butter and mix. Place it in the bottom of a springform pan.

Then use a mixer to mix the cream cheese, the sugar and the vanilla extract. Add the flour and mix. Add the eggs, one at a time. Finally, add the cold coffee. Pour the mixture over the ladyfingers base.

Let it bake in the oven at 180ºC for 30 minutes. Let it cool and then refrigerate.

Serve the cheesecake cold and with a smile.

Juntem a farinha e mexam.

    1. Thank you, Jasline! It isn't too sweet and I haven't tried it with more sugar, but if you prefer it sweeter you can always add more spoons of sugar. I prefer it this way: cold and not too sweet. Hope you enjoy it.

Boa semana!

    1. Thank you! That's exactly what happened to me: after all the running and buying and picking relatives up from the airport and driving to his parents' and then mine and cooking and saving from potential disaster and eating and drinking... I think I deserved it. Have a great week!
