Red Bell Pepper and Mushroom Sauce // Molho de Pimento Vermelho e Cogumelos


Boy!, I missed this.

This year we got to spend Christmas Eve with his parents (plus brothers-in-law, sisters, brother, nephew and niece) and Christmas at my parents' so it was double the fun. And kilometres. New Year's Eve was also nice. As usual, I think I may have eaten a bit too much, but everything was so delicious: the boiled cod with cabbage, the shrimp, my mom's almond pie...


The chicken breasts were in the oven. I was looking for the ingredients for a mushroom sauce. "Add a bell pepper to that sauce", he suggested. I looked at him, speechless, trying to decide whether he was being serious or not. I wanted to try something different anyway, so I accepted his challenge. And so this Red Bell Pepper and Mushroom Sauce was born.


Ingredients:

vegetable oil
1 tablespoon of margarine
250g of medium white mushrooms
1 red bell pepper
1 tablespoon of tarragon
8cl of white wine
200g of cream
a pinch of salt
black pepper
parsley leaves for decoration


In a pan, heat the vegetable oil and the margarine. Cut the bell pepper in thin slices and add them to the pan. After a few minutes, slice the mushrooms and add them to the pan, too. A few more minutes later, add the tarragon, the salt and the black pepper and give it a little stir.

Pour the white wine and let it reduce. 

Finally, add the cream and let it cook for a few minutes.

Add some colour to the sauce with a few leaves of parsley.

Que saudades que tinha disto.

Este ano pude passar a véspera de Natal com os pais dele (mais cunhados, irmãs, irmão, sobrinho e sobrinha) e o Natal nos meus pais por isso foi o dobro da diversão.  E de quilómetros. A passagem de ano também foi agradável. Como habitualmente, acho que posso ter comido um pouco demais, mas estava tudo tão delicioso: o bacalhau cozido com couves, o camarão, a tarte de amêndoa da minha mãe...

Os peitos de frango estavam no forno. Eu andava à procura dos ingredientes para um molho de cogumelos. "Acrescenta um pimento a esse molho", sugeriu ele. Olhei para ele, sem conseguir falar, a tentar decidir se ele estava a falar a sério ou não. Queria experimentar alguma coisa diferente de qualquer forma, por isso aceitei o desafio. E assim nasceu este Molho de Pimento Vermelho e Cogumelos.

Ingredientes:

óleo
1 colher de sopa de margarina
250g de cogumelos brancos médios
1 pimento vermelho
1 colher de sopa de estragão
8cl de vinho branco
200g de natas
1 pitada de sal
pimenta preta
folhas de salsa para decoração


Numa frigideira, aqueçam o óleo e a margarina. Cortem o pimento vermelho em fatias finas e coloquem-nos na frigideira. Alguns minutos depois, cortem os cogumelos às fatias e juntem-nas também à frigideira. Mais uns minutos depois, juntem o estragão, o sal e a pimenta preta e mexam.

Deitem o vinho branco e deixem reduzir.

Finalmente, juntem as natas e deixem cozinhar durante alguns minutos.

Dêem alguma cor ao molho com algumas folhas de salsa.
