Apricot Pecan Cake // Bolo de Alperce e Nozes Pecan


Last weekend was so great (as those of you who follow me on Instagram may have noticed). We went to Bairro Alto, listened to fado in Alfama, saw the sights in Sintra and Cascais...  

In fact, the weekend was so great, I needed this weekend to get a rest (does that only happen to me: needing a break after the break?).

But it's also 6 months since we moved here, so yesterday I slowly started to take out of the boxes a few things we should have organized months ago.


And of course I needed fuel, so I baked a cake first: an apricot pecan cake. Here's the recipe, which I found here, and adapted.



Ingredients:

200g dried apricots
water
250g pecan halves
200g butter, softened
200g Sores muscovado sugar
4 eggs, beaten
a pinch of salt
140g flour


Put the dried apricots in a saucepan and fill it with water so it just covers the apricots. Let it boil for about 5 minutes. Drain and blend them in a food processor until it becomes a paste.


Chop 100g of pecan halves.

Beat the butter and sugar until it is creamy. Add the apricot paste, chopped pecans, beaten eggs and a pinch of salt, and beat.

Finally, fold in the flour with a spoon.


Butter the cake tin and spoon in the cake mixture. Align the remaining pecan halves around the top of the cake.


Bake it to 180ºC for about 40 minutes.

O fim de semana passado foi tão bom (como os que me seguem no Instagram devem ter reparado). Fomos ao Bairro Alto, ouvimos fado em Alfama, demos uns passeios por Sintra e Cascais...

O fim de semana foi tão bom, que precisei deste fim de semana para descansar (isso só me acontece a mim: precisar de férias depois das férias?).

Mas já passaram 6 meses depois de termos mudado para esta casa, por isso ontem comecei lentamente a tirar de caixotes coisas que já devíamos ter organizado há meses.

E claro que precisava de combustível, por isso fiz um bolo primeiro: um bolo de alperce e nozes pecan. Aqui fica a receita, que encontrei aqui e que adaptei.


Ingredientes:

200g alperces secos
água
250g metades de nozes pecan
200g manteiga, amolecida
200g açúcar mascavado Sores
4 ovos batidos
uma pitada de sal
140g farinha


Coloquem os alperces secos numa caçarola e encham-na com água suficiente para cobrir os alperces. Levem a ferver durante cerca de 5 minutos. Escoem a água e triturem os alperces até se formar uma pasta.

Piquem 100g de metades de nozes pecan.

Batam a manteiga e o açúcar até ficar cremoso. Adicionem a pasta de alperce, as nozes pecan picadas, os ovos batidos e uma pitada de sal, e batam.

Finalmente, envolvam a farinha com uma colher.

Barrem a forma e com a ajuda de uma colher encham-na com a massa. Alinhem as restantes metades de nozes pecan à volta do topo do bolo.

Levem a cozer a 180ºC durante cerca de 40 minutos.

  3. I was looking for a recipe that uses dried apricots, but I couldn't find any! So I used up all my dried apricots in my granola. If only I saw this a week earlier! This looks great!
