Pork tenderloin with orange // Lombinho de porco com laranja

Ever had one of those days where you think you have all the energy in the world... but then you don't? Would you believe it if I told you I came from work and sat on the couch this afternoon only to wake up a couple of hours later? Wow, WHAT A NAP. And to make things better, I received a text from the boyfriend saying he would be late tonight. What a pity, hey? We ended up having dinner around 10.30pm (it's usually around 7pm), and this Pork Tenderloin with Orange, prepared with all the time in the world, was just what we needed.

Avoid drinking all the orange juice, no matter how inviting it is. Just sayin'.
 Season the tenderloin with salt and a bay leaf

Cook 3 garlic cloves in olive oil until they become golden. Add the tenderloin and allow it to golden on both sides. Add the juice or 3 oranges, 3 carrots cut in cubes and 1 onion. Add the equivalent to the orange juice in water, close the lid and let it cook for about 15 minutes.


Take the tenderloin out and cut it in slices, so all the meat gets that beautiful orange taste. Let it cook for 10 to 15 minutes.


I served it with rice and fries. I used the sauce to decorate and to dip the fries in.

Shh!!! Keep your fingers off!

Já tiveram um daqueles dias em que pensam que têm toda a energia do mundo, mas ah e tal, não? Acreditavam se vos contasse que cheguei do trabalho e sentei-me no sofá, para só acordar um par de horas mais tarde? Wow, QUE SESTA. E ainda melhor, recebi uma sms do namorado a dizer que ia chegar atrasado hoje à noite. Que peninha, hem? Acabámos por jantar cerca das 22h30 (costuma ser por volta das 19h), e este Lombinho de Porco com Laranja, preparado com todas as calmas, era mesmo o que precisávamos.

Tempera o lombinho com sal e uma folha de louro

Loura 3 dentes de alho picados em azeite num tacho. Junta o lombinho e vai virando até alourar também. Deita o sumo de 3 laranjas, 3 cenouras em cubos e 1 cebola. Junta o equivalente ao sumo de laranja em água, fecha a tampa e deixa cozinhar durante cerca de 15 minutos.

Retira então o lombinho e corta-o às fatias, para que toda a carne tome aquele gosto lindo da laranja.  Deixa cozinhar mais 10 a 15 minutos.

Servi com arroz branco e batata frita. Aproveitei o molho do tacho para decorar e para molhar as batatas.
