Shrimp, Spinach and Pomegranate Tagliatelle // Talharim de Camarão, Espinafre e Romã

January. The first month of the year. The month for positive thinking, color, healthy resolutions. Starting with the stomach.


Ingredients:

150g tagliatelle
100g shrimp
100g spinach
pomegranate seeds
salt
cayenne pepper
1 tablespoon butter
Paladin's coriander and garlic dressing


Remove the pomegranate seeds and reserve.

Boil the tagliatelle in salted water for 12 minutes.

Season the shrimp with salt and just a little hint of cayenne pepper. Melt the butter in a frying pan over medium heat, and fry the shrimp for 3 to 5 minutes. Add the boiled tagliatelle and the spinach and let it cook for 2 minutes.


Serve the tagliatelle. Sprinkle a few pomegranate seeds over each dish.


If you are like me, you can't think of fried shrimp without garlic. Instead of using it directly, a nice idea is to use it in a dressing - Paladin's coriander and garlic dressing is perfect for that, as it has just the right amount of garlic flavour and, being a dressing, will prevent the pasta dish from becoming dry.

Ingredientes:

150g talharim
100g camarão
100g espinafre
sementes de romã
sal
pimenta caiena
1 colher de sopa de manteiga
Molho de coentros e alho da Paladin


Retirem as sementes de romã e reservem.


Cozam o talharim em água salgada durante 12 minutos.

Temperem o camarão com sal e só um bocadinho de pimenta caiena. Derretam a manteiga numa frigideira em lume médio, e fritem o camarão durante 3 a 5 minutos. Juntem o talharim cozido e o espinafre e deixem cozinhar durante 2 minutos.

Sirvam o talharim. Deitem algumas sementes de romã por cima de cada prato. 

Se forem como eu, não conseguem pensar em camarão frito sem alho. Em vez de o usarem directamente, uma ideia agradável é usá-lo num molho - o molho de coentros e alho da Paladin é perfeito, uma vez que tem a quantidade certa de sabor a alho e, sendo um molho, vai ajudar a evitar que a massa fique seca.
