I have a bit of a secret: I think I love February 15th even more than... the day before. Mostly because there's so less pressure, isn't there? I mean: on Valentine's day if I say I'd like to go out for dinner, immediately we start to think what type of food we'd rather have, where we would like to go, if we need to make reservations, the clothes we're going to wear. On the other hand, if I don't really feel like going out and say so, the boyfriend drowns me with the typical "Are you ok? Are you sure? Did I say something wrong?" questions. So this time I decided I wanted to make something Valentinesy... the day after. And lucky me, I found just the perfect recipe: Portuguese cookbook author Joana Roque's "Bolachinhas de S Valentim". As usual, her recipe was a success: easy to follow and on the nose in terms of proportions. I didn't want to use raspberry jam - first, because I didn't have any; second, because my boyfriend isn't exactly fond of it, and he was the one I was baking the cookies for. He tends to find chocolate a bit too overwhelming, so I decided for a lemon cream filling instead. I'm quite satisfied with the result, so here's the full recipe. Ingredients: The Cookies (following Joana Roque's instructions): 120g flour 100g butter 50g sugar 30g chocolate powder The Filling: 4 tablespoons butter 4 tablespoons cream cheese 150g confectioners' sugar 1 dessert spoon vanilla extract zest of a lemon Mix the flour, the sugar, the chocolate powder and the butter with the help of an electric mixer. Then use your hands to knead the dough so it becomes more homogenous. With the help of a rolling pin, flatten the cookie dough. Use a cutter to shape and cut out your cookies and transfer them into a tray with greaseproof paper. Bake the cookies at 180ºC for 10 minutes. Take them out and let the cool completely before you use the filling to make the cookie sandwiches. I only thought of it when I had the first cookie, but just a tiny bit of fleur de sel over the top cookie would be heaven. So, while the cookies are cooling, prepare the filling. Beat the butter and the cream cheese for about 4 minutes. Add the sugar, the vanilla extract and the lemon zest and keep beating for 2 more minutes. Place the cream filling on half of the cookies. Press a cookie onto each cookie with filling, so it ressembles a sandwich. Prepare a cup of coffee or a glass of fresh orange juice and... enjoy! | Tenho um pequeno segredo: acho que gosto ainda mais do dia 15 de fevereiro que... do dia antes. Quer dizer: no dia de S Valentim se eu disser que quero sair para jantar, imediatamente começamos a pensar no tipo de prato que gostaríamos de comer, onde gostaríamos de ir, se precisamos de fazer reserva, nas roupas que vamos usar. Por outro lado, se não me apetece sair e o digo, o namorado inunda-me com as típicas perguntas "Estás bem? Tens a certeza? Disse alguma coisa errada?". Por isso esta vez quis fazer algo para marcar o dia... no dia seguinte. E sorte a minha, encontrei a receita perfeita: a no di de pensar de que gosto mais neste prato: as "Bolachinhas de S Valentim" da Joana Roque, autora de livros de cozinha. Como habitualmente, a receita dela foi um sucesso: fácil de seguir e no ponto em termos de proporções. Não queria usar doce de framboesa - primeiro, porque não tinha; segundo, porque o meu namorado não é propriamente louco por doce de framboesa, e era para ele que estava a fazer as bolachas. Ele tende a enjoar ao chocolate ao fim de um pouco, por isso decidi antes fazer um recheio de creme de limão. Fiquei bastante satisfeita com o resultado, por isso aqui fica a receita total. Ingredientes: As Bolachas (seguindo as instruções da Joana Roque): 120g farinha 100g manteiga 50g açúcar 30g chocolate em pó O Recheio: 4 colheres de sopa de manteiga 4 colheres de sopa de creme de queijo 150g açúcar em pó 1 colher de sobremesa de extracto de baunilha raspa de um limão Batam a farinha, o açúcar, o chocolate em pó e a manteiga com a ajuda de uma batedeira. Usem então as mãos para amassar a massa de forma a tornar-se mais homogénea. Com a ajuda de um rolo da massa, alisem a massa. Usem um cortador para moldar e cortar as vossas bolachas e transfiram-nas para uma travessa com papel vegetal. Cozam as bolachas a 180ºC durante 10 minutos. Retirem-nas e deixem-nas arrefecer completamente antes de usarem o recheio para fazerem as sandes. Só pensei nisso quando provei a primeira bolacha, mas um pouquinho de flor de sal por cima da bolacha que fica por cima seria uma maravilha. Então, enquanto as bolachas estiverem a arrefecer, preparem o recheio. Batam a manteiga e o creme de queijo durante cerca de 4 minutos. Juntem o açúcar, o extracto de baunilha e a raspa de limão e continuem a bater mais 2 minutos. Coloquem o recheio de creme e metade das bolachas. Pressionem uma bolacha em cima de cada bolacha com recheio, de forma a parecer uma sandes. Preparem uma chávena de chá ou um copo de sumo de laranja fresco e... bom apetite! |
