Walnut Cake // Bolo de Noz


Today I'm at my parents'. And what a lovely Saturday it has been. We went out for coffee with a few of their friends, and shared memories of past holidays (it's amazing how so different people, going to the same place in such different times, end up having so similar memories). We shopped for fruit and cheese and bread in some of my parents' favourite stores. Most importantly, we baked.

I love going through my mother's old recipes - carefully stored in her handwriting - and picking the weekend's treat.

Today we baked my mother's beautiful walnut cake.

Here's the recipe.


Ingredients:

6 eggs
200g sugar
250g walnuts, finely crushed
60g flour
1 tea spoon baking powder
3 tablespoons milk
margarine and flour
powdered sugar



Separate the yolks from the egg whites.

Whisk the egg whites.

In another bowl, beat the yolks with the sugar. Add the flour, the nuts, the baking powder and the milk. Combine everything together.

Finally, fold the whisked egg whites into the batter.

Pour the mixture into a cake tin, previously greased with margarine and sprinkled with flour.

Let it cook in the oven to 170º for about 30 minutes.

Sprinkle it with powdered sugar.

I served it with a nice cup of purple globe amaranth flower tea.

Hoje estou nos meus pais. E que sábado maravilhoso tem sido. Saímos para beber café com alguns dos amigos deles, e partilhámos memórias de férias passadas (é incrível como pessoas tão diferentes, que vão ao mesmo sítio em épocas tão diferentes, acabam por ter memórias semelhantes). Comprámos fruta e queijo e pão em algumas das lojas preferidas dos meus pais. Mais importante que isso, fizemos um bolo.

Adoro vasculhar as receitas antigas da minha mãe - guardadas cuidadosamente na sua caligrafia - e escolher a gulodice do fim de semana.

Hoje fizemos o maravilhoso bolo de noz da minha mãe.

Aqui fica a receita.


Ingredientes:

6 ovos
200g açúcar
250g nozes, bem picadas
60g farinha
1 colher de chá de fermento em pó
3 colheres de sopa de leite
margarina e farinha (para untar)
açúcar em pó



Separem as gemas das claras.

Batam as claras em castelo.

Noutra taça, batam as gemas com o açúcar. Juntem a farinha, as nozes, o fermento em pó e o leite. Envolvam tudo. 


Finalmente, envolvam as claras na massa. 


Deitem a mistura numa forma para bolos, previamente untada com margarina e polvilhada com farinha.

Levem a cozer durante cerca de 30 minutos a 170º.

Polvilhem com açúcar em pó.

Servi com uma bela caneca de chá de perpétua roxa.

    1. Thank you, Angie. When checking the ingredients in my mom's recipe, I was expecting it to be a bit too heavy, because of the nuts. But I couldn't be more wrong: it was really fluffy. Having about 1/4 of the nuts coarsely chopped is great too.

    1. Sei o que isso é. Quando isso acontece, acabo por fazer doses mais pequenas - em versão cupcake, por exemplo - porque não gosto do desperdício de fazer um bolo grande só para mim.

    1. Eu gosto muito de bolos com creme, mas também já o disse aqui que cá por casa apreciam mais sem creme. Uma fatia deste bolo com chá quente ou com uma meia de leite é qualquer coisa. :)

    1. I agree, Ashley. There's nothing like our mother's touch in the kitchen. :) (Even if that means that although she has her recipes written down, she doesn't quite follow them. "I know I wrote 100g of sugar... but I always add 140g. Change the recipe? What for?") :D
